Easy Shrimp and Grits

  • 4 pieces Bacon
  • 8 oz Frozen Shrimp
  • 1 Red Bell Pepper
  • 2 tbsp Olive Oil
  • 2 tbsp Minced Garlic
  • 1 tbsp Parsley
  • 1/2 tbsp Paprika
  • 1/2 tbsp Cumin
  • Salt & Pepper
  • 1/2 cup Chicken Broth
  • Juice of Half a Lemon
  • 4 packs Instant Grits
  • 2 tbsp Cream Cheese
  • Handful of Shredded Cheese as much as you prefer


  • Chop bacon and bell pepper to small, diced pieces
  • Thaw and remove tails of shrimp (if needed)
  • In a skillet, over medium heat, add olive oil, bell pepper and bacon
  • Saute until bacon is almost cooked (about 5 minutes)
  • Add in shrimp, paprika, cumin, parsley, garlic and salt + pepper.
  • Saute until shrimp is fully cooked, about 10 more minutes
  • Add in chicken broth and lemon juice, bring to a simmer
  • Let simmer for about 5 more minutes
  • While shrimp mixture is simmering, boil water for instant grits (according to package + a little extra)
  • In a large bowl, add all grits packets + cream cheese. I do 1/2 tbsp of cream cheese per instant grits package
  • Once water is boiling, add a little at a time to grits, stirring to combine.
  • Add in shredded cheese + more water. Continue this combination until you have your desired grit consistency & cheesiness. If it's too thick and cheesy, more water will help.
  • Add grits to individual bowls and spoon in shrimp mixture + sauce. Enjoy!
