Chop bacon and bell pepper to small, diced pieces
Thaw and remove tails of shrimp (if needed)
In a skillet, over medium heat, add olive oil, bell pepper and bacon
Saute until bacon is almost cooked (about 5 minutes)
Add in shrimp, paprika, cumin, parsley, garlic and salt + pepper.
Saute until shrimp is fully cooked, about 10 more minutes
Add in chicken broth and lemon juice, bring to a simmer
Let simmer for about 5 more minutes
While shrimp mixture is simmering, boil water for instant grits (according to package + a little extra)
In a large bowl, add all grits packets + cream cheese. I do 1/2 tbsp of cream cheese per instant grits package
Once water is boiling, add a little at a time to grits, stirring to combine.
Add in shredded cheese + more water. Continue this combination until you have your desired grit consistency & cheesiness. If it's too thick and cheesy, more water will help.
Add grits to individual bowls and spoon in shrimp mixture + sauce. Enjoy!
