Mondays are my favorite for sharing easy lil’ recipes for y’all (still so delicious though don’t worry!). This Monday I’m combining allll the things.. easy recipe + meatless Monday + heat & eat goodness to bring you my new favorite dish!
Meet my Vegetarian Buffalo Bowls!
These babies were born on a day when we were low on groceries, but had a few of my favorites in the freezer. I try to keep Cauliflower Rice and Buffalo Chickpea patties in the freezer all the time, I decided they would make a good combo and luckily had a ripe avocado and Greek Yogurt Cilantro Avocado dressing to pull it all together. Topped with a sprinkle of Feta, this dish has officially become on of my favorites.
The only downside of this dish is that I haven’t found a way to take it with me to work, but it makes the perfect quick lunch or easy dinner that’s still healthy, flavorful and cheap. #OhYesPlz
Vegetarian Buffalo Bowls
Serves 1
Easy
Ingredients:
1 Morning Star Buffalo Chickpea Patty
1 Cup of Cauliflower Rice (Frozen)
1/2 Avocado
Avocado Cilantro Greek Yogurt Dressing (As much as you please, you can also use a different type of creamy dressing if you’re not a cilantro fan!)
Sprinkle of Feta Cheese
Directions:
1. Prepare chickpea patty and cauliflower rice according to package
2. Dice avocado & chickpea patty
3. In a bowl, combine all the ingredients
Enjoy!
This dish is not spicy or hot at all! You could add extra buffalo sauce if you wanted more of a kick. It would also be good with some diced celery or onions if you like a crunch!
