If there’s one thing I’m known for it’s a love of birthdays, especially my love for a great cake. I believe a celebration isn’t a celebration without a cake and you can never miss a celebration!
But sometimes life is busy.
Which is why I’ve coined the term ‘Cake Over’. It’s like a make over for your favorite cake. It can be done to Walmart Cakes, Whole Food Cakes, basically any cake you have in mind. Much like any great hack, it’s easy, cheap and gets the job done.
My favorite cake over is the melted ice cream cake. Guests will literally not believe you when you tell them you made it! It’s so easy and has a huge impact. I’ll also share a few other cake overs that are even more simple than this ice cream trick.
First, you need to find your base cake. I would say that a taller, round cake does best but any cake will work. Next you need 1-2 cupcakes depending on how big you want your ice cream cone to be. You can usually buy individual cupcakes in any grocery store bakery. For an extra impact, you will need a round cookie or fudge cake (Little Debbie) but if you don’t want to worry about this, it’s not the end of the world! In addition, you’ll need ingredients to make a white chocolate ganache- white chocolate chips and heavy whipping cream. To really jazz it up, I like to dye the ganache pink with food coloring, add sprinkles and you cannot forget the ice cream cone!
Even if you can’t bake, you can make this cake!

Cake of Choice
1 Ice Cream Cone
1 Bag of White Chocolate Chips
1/2 Cup of Heavy Whipping Cream
Optional: Sprinkles, Food Coloring, something round like a cookie or Little Debbie.
D I R E C T I O N S
1. Using a butter knife, gently remove any icing from the top of the cake and discard.
2. On the stove, bring heavy whipping cream to a simmer/slight boil.
3. In a small bowl, place 1 cup of white chocolate chips and top with whipping cream. Cover with aluminum foil and let sit for five minutes.
4. While the chocolate is sitting, place cupcake in a small bowl and mash together until all icing and cake is combined. Roll into a small ball. If using a cookie/Little Debbie, place it on top. Set aside.
5. After 5 minutes, use a fork to whisk together chocolate chips and heavy whipping cream until it is completely melted and no lumps. If you want to dye it, add in your dye & whisk until well mixed.
*you want your mixture to be thick, if it’s too thin- let it cool for a few minutes.
6. Dip you smashed cupcake ball creation into the ganache and use a spoon to ensure it’s fully covered. Set aside to dry.
7. Take the ganache and place a spoonful in the middle of your cake. Use the back of the spoon to slowly spread it out in circular motions. Continue until it looks like the ganache is close to the edge. You don’t want to overflow because then too much will drip down. You want slow, random drips to come over the edge. It’s better to start with too little than regret having too much.
8. Once you’re happy with how much has dripped over the edge, carefully place your cupcake ball on top. You can do it in the middle or off to the side, whichever you prefer. Next gently place the ice cream cone on top. Cover in sprinkles or whatever else you are adding (a cherry would be cute!).
9. Place in fridge for at least 25 minutes or until ganache is hard.

I know it seems like quite a few steps, but it’s actually very quick and easy! RJ was so impressed with how easy it was, although he was very confused why I was destroying the cake at first. 🤣

Just take a roll of your favorite cookie dough and press it in the bottom of a cast iron skillet, bake at the temperature on the box (just watch carefully for the time) and then top with your favorite ice cream and toppings!
-One year I made ice cream sandwiches for a summer birthday get together! They were easy, fun and different than your typical cake! Just bake a few batches of your favorite cookies, scoop ice cream in the middle. You can even roll them in sprinkles or chocolate chips.
-For my sister’s 2nd birthday, we ordered unicorn fondant pieces off Etsy and used those to decorate a plain white cake. That one definitely takes some advance planning/ordering but turned out so cute!
