‘The Victor’ -August’s Drink of the Month

I am starting a new series on my blog featuring a drink of the month! I wanted to kick off the series with one of my absolute favorites, I invite you to try the recipe out and let me know what you think!

A couple of months ago I took a spur of the moment (literally decided two hours before it was time to leave) trip to Miami. I’ve always wanted to go to Miami for obvious reasons. It’s tropical, fun, and full of Mojitos. I love Mojitos. We stayed at the Hotel Victor and was incredible. Our room opened up to the pool and overlooked the ocean. One of my favorite places I’ve ever stayed. 

Although it was a short girls’ getaway, I will never forget the memories I made that weekend. Since summer is wrapping up, I wanted to recreate the Mojitos we drank but add a fun little twist. 




Introducing ‘The Victor’..

I grow herbs in a pot on my porch and mint grows the fastest, I’m not complaining I could put mint in every single drink, but you can also buy mint at the store! I picked mint leaves and put them in a mason jar (for reference I filled it up half way with leaves) and poured plain rum in. I let it soak in my fridge for 3 days. The result is the most delicious mint infused rum you’ll ever taste! 

I didn’t want to make just a plain Mojito how boring would that be. I decided a triple berry simple syrup would be a perfect addition! I was nervous because I’ve never made syrup before but it’s so so simple (hence the name simple syrup!) anyone could do it! It’s just water, berries and sugar. I used frozen berries because I keep bags of them frozen for smoothies but you could definitely use fresh berries as well! 

The drink is fresh, light and fruity. It’s perfect poolside, paired with Taco Tuesday, or drinking with your girls before a night of dancing. I hope you try it out, it’s so yummy. The Victor

For the Rum:

2 Cups Mint Leaves

1 Liter of Rum


Combine in mason jar and keep in fridge for at least three days. 


For the Berry Simple Syrup:

1 1/2 cups of Berries (I used Blueberries, Strawberries and Raspberries)

1 cup of Sugar 

1 cup of Water


Combine in a pot on high heat. 

Bring to a Boil.

Reduce heat to medium, occasionally stirring, for 20 minutes.

Optional: Strain through a mesh strainer


For the Drink:

Makes 1 Pitcher

2-3 Limes

1 Liter of Mint Soaked Rum

Simple Syrup 

Soda Water

Brown Sugar 

White Sugar

1. Squeeze 2-3 Limes 

2. Add the Rum

3. Add 4-5 Spoonfuls of Syrup

4. Top with Soda Water

5. Stir

6. Pour over ice and garnish 

*Optional, to line the glasses: Squeeze a little bit of lime juice on a plate, on a separate plate mix the brown and white sugar (About 3 spoonfuls of each). Wet the rim of the glass with water, dip the rim in the lime juice then dip the rim in the sugar.
