What’s more appropriate than a spiked coffee on a Monday morning? In my book- nothing! A few weeks ago I was in Colorado, the time difference doesn’t seem that large but it really gets this gal! Long story short, I needed coffee and I needed a cocktail, so I mixed the best of both worlds. This simple cold brew mixture turned out to be one of my favorite new drinks. When I got home, I had to mix up this delicious Spiked Iced Coffee for RJ too.
With only a few ingredients, that we keep on hand now, this spiked iced coffee can be whipped up in just a few moments! It’s quickly become hub’s favorite drink and I completely understand why. It’s the perfect mixture of sweet and espresso, and really can take on whatever seasonal flavor you want to add!
Simple Spiked Iced Coffee
Ingredients
- Iced Coffee, Starbucks Blonde Roast is my favorite.
- Two Shots of Vanilla Vodka
- Bailey's
- Cinnamon All Natural Creamer (or Creamer of Your Choice)
Instructions
- Fill a glass halfway with ice
- Add vanilla vodka, Bailey's and creamer
- Top with Iced Coffee
- Stir and Enjoy!
This is like the basis for a perfect, simple spiked coffee! You can jazz this up to fit your favorite flavor or even for the season. You could do pumpkin spiced creamer for a PSL inspired cocktail or add some syrup flavoring for more fun. You could even add a fun twist on your favorite Starbucks drink like my Copycat Starbucks Iced Cinnamon Almond Milk Macchiato.
This winter I’m going to try a Mint Mocha version of this with peppermint vodka and a dark chocolate creamer, I will keep you updated!
