Ground Turkey Sloppy Joe Sweet Potatoes

I try to find recipes that are nearly impossible.. like I want them to be healthy, I want them to be easy, they need to be delicious and they can’t be too healthy that hubby won’t eat it. And preferably, I want it to make a lot of food that we can eat as leftovers but also be cheap. See impossible.

But when I do find a recipe that fits all the criteria, boy is it a winner! We will keep it on repeat for months! This past summer we kept these Sweet Potato Sloppy Joes on repeat and they are perfect for your Fall cook book!

RJ is a huge sloppy joe fan, but I thought I didn’t care for them. When he requested them over and over, I finally decided to cave! Of course, I had to create a healthy version. Since I usually don’t eat them, making this I was so nervous I wouldn’t be able to get the flavors right. RJ seemed to love it though and one day I was reheating it at work when someone asked “who’s eating sloppy joes?!”. So I think I’ve finally nailed it down and it’s time to share it with you guys. I’m thinking a post soon will be how I create my own recipes.


I guess technically you could eat it on buns, but the sweet potato is so good y’all. I’ve started to think the perfect recipe is a mix of savory + spicy + sweet & this hits the nail on the head. You can turn up (or down) the spice as needed to make it perfect for you!!

Even though this makes a lot, it’s not expensive so it’s perfect for family dinner, repack for lunch or next time you have some friends over! Think of it as a fun twist on chili night.

Ground Turkey Sloppy Joe Sweet Potatoes 

I N G R E D I E N T S 
1 Package of Ground Turkey
1 Can of Kidney Beans (Drained)
1 Can of Navy Beans (Drained)
2 Cans of Tomato Paste
1/2 Cup of Water
1/4 Cup of Worcestershire Sauce
1 tsp. Minced Garlic
1 1/2 tsp. Cumin
1 1/2 tsp. Chili Powder
1/2 tsp. Onion Powder
1 tsp. Paprika
1 tbsp. Apple Cider Vinegar
6 Sweet Potatoes

D I R E C T I O N S 
1. In a large skillet on medium heat, brown ground turkey until no pink remains
2. Reduce to low and mix all ingredients together
3. Stir and simmer for 20 minutes
4. While simmering, poke holes in sweet potatoes and cook in microwave
5. Serve Sloppy Joe mixture in Sweet Potatoes & Enjoy

This mixture is also so good over plantain chips for a healthy version of nachos! If you’re doing Whole 30 you can leave out the beans and it will be approved.

This is one of those dinners at our house where you eat and eat because it’s so good and you end up so full you can’t move! You have to let me know if you try it or make any modifications! I bet it would be good with some sautéed onions or peppers, we just don’t like either! xo

Soaking up everyday is easy with this sweet boy. He’s pretty much all smiles as long as the attention is all on him. He really loves eating, babies and Doodle. He’s scooting and already trying to get into everything. Lucky for us, so far he pretty much just goes in circles. His first tooth popped through and he has a little bit of very blonde hair. ⁣
