Last week we kicked off the cook club! I focused on sharing my four favorite quick, easy, go-to recipes. Not only did these use minimal dishes (making for an easy clean up) but they also are some of my favorite taste wise. If you missed them, check them out here.
This week I wanted to share a favorite chicken recipe with leftovers you can repurpose throughout the week. One night of cooking a big batch, leading to an easy + delicious week of new meals! Whenever I have a busy week, I’ll make the Skinny Fiesta Chicken Bowls & feast on the leftovers throughout the week. I also stuck to a ‘skinny mexican’ theme because who doesn’t love Mexican food!?
All these recipes are dairy free (minus the Plain Greek Yogurt which is the best sub for Sour Cream, they taste the exact same) but could easily add cheese to if you wanted!
The fiesta bowls will feed two with left overs, but if you have a larger family I would suggest doubling the recipe in order to have left overs. I’ve been making this chicken for years, it’s extremely flavorful & juicy, everyone loves it!
