Cinco de Mayo is one of my favorite holidays! First, Mexican food is one of my all time favorites + it symbolizes the unofficial start to Summer (at least in my book!). The one problem is that it can be very dangerous- at least in terms of staying healthy!
To stay true to the Yes, Please handbook I am here to help you have a fun, festive and lighter Cinco this year. I’m rounding up my favorite ‘skinny’ Mexican meals (including a 3 ingredient crack chicken!), a healthier Margarita alternative and my ultimate weakness – CHIPS.

What’s a fiesta without some delicious grub!? Since I’m not giving up Mexican food anytime soon, I’ve mastered the art of making it lighter.
Skinny Fiesta Chicken. aka Mexican crack chicken. I’ve never met someone who doesn’t love this chicken and the best part, it’s 3 ingredients, Whole 30/Paleo/Dairy Free etc. etc. & CAN BE MADE IN THE CROCKPOT. YES PLEASE! I love making a huge batch for chicken tacos but it’s also incredible on salads or burrito bowls.
Speaking of burrito bowls, this is one of my favorite ways to go lighter while still enjoying the fiesta. Instead of a taco, I’ll opt for a burrito bowl. This cuts major calories/carbs of using a tortilla or shell! I will use cauliflower rice or diced, baked sweet potatoes. Both are delicious!
A few other lighter swaps:
++ swap refried black beans for traditional refried beans
++ swap plain greek yogurt for sour cream, I swear no one will notice!
++ reach for a healthier chip alternative! These multi grain tortilla chips from Late July are filled with grains like quinoa, chia seeds and more. Plus, they’re super yummy.

We all know Cinco de Mayo is about the drinks! The only problem is it can be hard to enjoy a margarita and stay on track. Yes, I’m all for splurge days but let’s be real.. this lady would much rather enjoy a donut or two than a 1,200 calorie margarita. But, hey! That may just be me..
If you’re in my boat and want a lighter margarita this year, I’ve got you girl!
Light Margarita makes one margarita
2 Shots of White Tequila
1/4 Can of Lime Flavored Sparkling Water
2 Shots of Coconut Lime Sparkling Bai Water
3 Shots of Pure Unsweetened Coconut Water
Squeeze or two (or three) of Fresh Lime
Shake. Pour over ice. Enjoy!
It’s the most refreshing margarita! It’s super light, bubbly and not syrup-y at all!
**We really, really enjoyed this margarita recipe and I hardly got any photos of the finished ‘marg’. This last pic is from our 3rd or 4th one and we had given up on even going back in for ice. 😂 RJ said it was the best margarita he’s ever had!
