Happy Halloween: Cat Burglars & ‘Faux-Nuts’

October 29, 2015

/ uncategorized

Ok so everyday I get on here and talk about how much I love Fall and Halloween and Thanksgiving and basically everything that revolves around yummy, yummy food. The one thing I hate about this time of year is the calories. Every food this time of year is so heavy and makes you feel blaaah. Today I’m sharing my 5 ingredient solution to this problem & (in part two of this kinda long post) I’m sharing my last minute Halloween costume!

SO, technically you can make these ‘faux-nuts’ aka donuts with just two ingredients. If you don’t have a donut pan, you can literally use the batter to make a n y t h i n g (cupcakes, muffins, cakes, cookies, etc.). If you want them to be extra special, I’m including a two ingredient recipe for a glaze and topping these babies with sprinkles for a grand total of 5 INGREDIENTS! Let’s go.

What you need.. 1 box of cake mix (if you don’t want chocolate you can use spiced cake mix for the most delicious Fall flavor!), 1 can of pumpkin puree (found on the baking aisle), 1-2 cups of powdered sugar, about a half a cup of milk and sprinkles. That’s it. No eggs, oil, water etc. don’t worry that the cake mix box is saying you need it, I promise you don’t.

Preheat your oven according to the box, for mine I set my oven to 350 degrees.

In a mixing bowl combine cake mix and pumpkin puree.. I repeat do not add anything else to the batter (like eggs or oil!) unless it’s chocolate chips or walnuts or maybe something else yummy like that. Mix until it’s well blended.

Next I place all the batter in a ziplock baggie, I cut the corner of the baggie to create my own ‘DIY Piping bag’ *this works so well for icing cupcakes too!. I then fill the donut molds. This step is completely optional and think it’s probably unnecessary unless you have a small mold like this donut one. Place in the oven and bake until firm to touch. (Around 10 minutes for the donut mold, you can also do the old ‘stick a fork in it’ trick).

While the donuts are baking you can start on the glaze. Pour your powdered sugar into a small mixing bowl, add one spoonful of milk into the bowl and stir. Add milk by the spoonful until your glaze is thick and all sugar is dissolved.

Once your donuts are finished baking, let them cool. Remove from pan and pour on drizzle the icing on to the donuts. Top with sprinkles (I grabbed these Halloween sprinkles in the dollar section of Target). Enjoy!

Now that your yummy, tiny ‘faux-nuts’ are finished, we can move onto the last minute costume! I originally pulled the ultimate lazy girl Halloween move: leopard pj’s & cat ears, Hey, there is nothing wrong with that costume but I decided to jazz it up just a tad! I added a bandit mask (an old tee shirt I cut up) and a stripe shirt to become the sneakiest cat burglar in town! Chocolate Faux-Nuts

Makes 24-36 depending on your pan

Ingredients:

1 Box of Cake Mix (Chocolate or Spiced)

1 Can of Pumpkin Puree

1 Cup of Powdered Sugar

1/2 Cup of Milk

Sprinkles

Directions:

For Cake:

1. Preheat oven according to box

2. Mix cake mix and pumpkin puree together (no eggs, oil, water or anything else needed)

3. Place into mold of your choice (donut, muffin, cake, onto a cookie sheet for cookies, etc)

4. Bake for 10-14 minutes depending on your mold (cake should be firm to touch, if you stick a fork in it & it should come out clean)

5. Let cool before icing

For Icing:

1. Add powdered sugar into a small mixing bowl

2. Stir in milk, one spoonful at a time until it becomes an icing like consistency

3. Spoon over the donuts & top with sprinkles

If you make 36 mini donuts or cookies out of this batter (minus the icing) each one is only 49 calories. You can cure your sweet tooth and impress everyone by your baking skills! Don’t worry I won’t tell anyone it’s only a few ingredients. 🙂 What are everyone’s plans for Halloween?! I hope y’all have a great Thursday it’s still so rainy here.
