Not only have we saved so much money, we are probably eating healthier and I’m finding new recipe ideas! My latest obsession is this super easy, low carb lunch – a Greek Salad.

This low carb lunch is so delicious, I don’t know if I’ve ever had a better salad! It’s quick and easy to throw together + can be customized or even jazzed up for a dinner. I ate this salad every single day last week and still am not sick of it. I wish I could invite you guys all over to try it, it’s that good!
Much like this recipe, I’m skipping the fluff and getting right to the good stuff. Below is the base for this greek salad, my favorite easy low carb lunch but feel free to add things like olives, tomatoes or onions. One day I added chickpeas and one day I added couscous (cook according to package and add a little salt, olive oil and lemon juice.) – both delicious! Also, one day I ran out of rotisserie chicken and added air fryer, gluten free chicken tenders and it was so yummy too.
Greek Salad - Easy, Low Carb, Keto Friendly
Ingredients
- shredded chicken I use rotisserie
- arugula
- taziki dip/sauce
- avocado, diced
- cucumber, diced if not included in your tzatziki
- feta cheese
Instructions
- Add everything to a bowl, mix and enjoy!
optional: add diced onions, tomatoes, artichoke hearts, peppers or olives. you can also add chick peas, cooked couscous, and a sprinkle of dill.
Cedar’s makes my all time favorite tzatziki sauce. I could eat the whole package in one setting. It’s great as a dip, but doubles as the most delicious, unexpected dressing!
