Greek Chicken Flatbread Sandwich

Have y’all heard about the grocery stores delivering your order to your car now? As soon as I heard about it, I immediately said No Way Jose. I can definitely appreciate how this is probably a huge savior for some (I see you girl bosses!), but for me it’s a no. *Cue Simon Cowell Voice* 

I love to go the grocery store. I know, I know y’all think I’m nuts! I probably am, but there are two reasons I can’t get behind grocery deliveries yet.. 1. I am super picky about produce, especially my avocados. I don’t even trust Babe to pick out my precious produce, how am I expected to hand that task off to a stranger?! 2. I love to wander around the store and find new items. 

Just last week, I spent my lunch break wandering through Whole Foods when I spotted a Greek Yogurt Taziki Dip. 

It was organic, only four ingredients and begging to be put in my basket. After digging into it as soon as I got home, I realized this dip needed to be spread on anything and everything. I immediately started brainstorming new recipe ideas. 

Lo and behold, the Greek Chicken Flatbread was born! Aren’t y’all glad I wander around the store now!?

I am a huge fan of ezekiel bread. I’ve heard wonders about its benefits and I love that it stays in the freezer (aka lasts longer). When I noticed these ezekiel pita rounds I decided to give them a try. They’re definitely my new favorite —I found them in the freezer section of Whole Foods. 

I always test my recipes out on my friends before blogging. I whipped this up for a girlfriend last week and she loved it. I swear we were completely silent while stuffing our face. Besides how great this tastes, it’s easy to make and keeps you full all day long. This is one of my favorite lunches for busy days because it’s so quick to throw together but keeps me full all day. 

A few more notes about the recipe: 

— If you cannot find the Greek Yogurt Taziki Dip, I’m going to give this recipe a whirl for you guys! I’ll report back on how similar it is to the store bought taziki.

–This is great served cold, make it the night before and take to lunch the next day! I swear you’ll be the envy of the office. 

–The cabbage mixture I’m using is a cole slaw salad minus the dressing that I grabbed from Whole Foods.

I hope your Monday is treating you well. I’m still in Memphis with my family but I’m eager to get home and test out some new kitchen gadgets we received after my first Bridal shower! It was the most perfect weekend spent celebrating the wedding with my Memphis family and friends + one of my high school bff’s had her baby shower yesterday! It was definitely filled with lots of laughs and a few happy tears #ThanksGrandma. I couldn’t be more thankful of all the amazing people in our life.
