Friday Fill In 2.9.18 NATIONAL PIZZA DAY

You know the only thing that’s better than Friday?! PIZZA! Today is National Pizza Day and I’m so excited to celebrate. Technically, we started the celebration last night when we shot these pics.. but who doesn’t love celebrating pizza twice?! 

Today, I thought it would be fun to make the Friday Fill In, PIZZA THEMED.

Mamma Mia!

I was in Knoxville this week and I ran to their Trader Joe’s to pick up pizza ingredients. I have been dying to try their Cauliflower Pizza Crust. OMG Y’all. It was incredible. I really was excited about this pizza crust because I’ve had the hardest time finding one on Pinterest that was dairy free. 

If you live by Trader Joe’s, I highly suggest picking up this crust! It was crispy, flavorful and delicious. If you don’t live by TJ’s this recipe looks like a great alternative + can be both dairy free or made with cheese! 

A few other things we picked up from TJ’s for pizza night:

Dough for RJs Pizza (I tried a bite, so yummy! As you can see in the pics above, Dallas HATED the pizza dough being tossed in the air ha!)

Almond milk cheese for my pizza (I’m going to stock up on this!)

-a Dairy Free Pesto! I was so excited, I have been looking for a dairy free pesto everywhere. This one is Kale Basil Cashew. 

-Traditional Pizza toppings: cheese, pizza sauce, pepperonis, tomatoes 

A few of my all-time favorite DIY pizzas: 

Pesto, Sliced Tomatos, a little cheese & garlic. After you cook, top with arugula and lemon juice.

-Pesto, Goat Cheese & Fig

-Artichoke Hearts, Spinach, Tomatoes, Roasted Red Peppers, Garlic and Feta

-Pesto, Shrimp, Avocado

-Chicken, Broccoli & Spinach

When we were engaged, we loved making these Naan Bread Pizzas. It was so fun to look back at our old nights, dreaming of married life & fighting over what’s for dinner (nothing has changed ha!).

 If you live in Chattanooga and ever make a trip to TJ’s in a neighboring city (Knoxville, ATL, Nashville), get a freezer bag! They sell them in the store and you can grab frozen or refrigerated items to take home. If you’re interested, I can do a full post on my Trader Joe faves. 

Pizza date nights are my favorite. They are so easy and fun. RJ isn’t a big chef, so this is the best way to get him involved in the kitchen.
