Five Guilt Free Desserts – [Five Minutes or Less, Five Ingredients or Less!

February 16, 2018

/ dessertfooduncategorizedyum

FriYAY! I hope you all had the best Valentine’s Day! I love all you guys so much. I took the week slow, to give more attention to RJ and myself since this is the holiday of love. After a great lil’ break I’m back and wishing  I could gift you all huge boxes of chocolate but since that’s financially impossible (and probably very unhealthy), my five favorite healthy desserts will have to do.

I think one of the hardest parts of clean eating is that recipes often call for so many strange ingredients, steps or are expensive. Honestly, I turn away from those recipes every time. I try my hardest to create healthy, simple and delicious recipes made from real ingredients (and ones that can be found at almost any grocery!).

These five desserts are my favorite for satisfying an after dinner sweet tooth or 3 o’clock slump. Most can be made ahead, store well in the fridge/freezer and only take a few minutes to whip up. #OhYesPlz! The hardest part is not eating the whole batch at once.

Dark Chocolate Nut Cups
Makes 6 Mini Cups
1/2 Cup of Dark Chocolate Chips
1 TBSP Coconut Oil
1/4 Cup of Nut Butter (Peanut Butter, Almond Butter, etc.)

1. In a mini muffin tin, line 6 cups with cupcake liners or spray with oil/pam/sprayable coconut oil
2. In the microwave, melt together chocolate chips & coconut oil. Every 30 seconds, stir mixture to keep from burning.
3. In a muffin tin, spoon 6 cups halfway full with melted chocolate
4. Add a small amount of nut butter to each, top with remaining chocolate
5. Freeze until solid, use a spoon to remove from muffin tin if you have trouble! Store in freezer or fridge until eating! I keep mine in the fridge, they’re so good I could eat the whole batch at once!

3 Ingredient 80 Calorie Mug Cake- I have a full post on this! It’s been one of my favorite desserts for a long time. It only takes two boxes of cake mix & water to make, plus one batch makes sooo many cakes so it’s so cheap too. I love the chocolate but the funfetti is good too! See the full post here or check out the steps below.

1 Box of Angel Food Cake Mix (Powder Only)
1 Box of Any Other Flavor Cake Mix (Powder Only)
2 Tbsp Water

1. In a large, sealable container mix both cake mixes (powder only) together well.
2. In a mug, combine 3 tbsp cake mix, 2 tbsp water & mix.
3. Microwave for 1 minute.
Easy as 3-2-1!

Dark Chocolate Bananas
2-3 Bananas
1/2 Cup of Dark Chocolate Chips
1 Tbsp Coconut Oil

1. In the microwave, melt together chocolate chips & coconut oil. Every 30 seconds, stir mixture to keep from burning.
2. Slice the bananas and use a fork to dip in the chocolate.
3. Place on a lined cookie sheet and into the freezer until hard. Store in an airtight container in freezer!
I love letting mine thaw out a little and eating with a glob of peanut butter on top, SO YUMMY.

Mug Apple Crumble
1/2 an Apple
1 Tbsp Coconut Oil
1/2 Tbsp Cinnamon
a Pinch of Brown Sugar
Optional: Walnuts, Pecans, Graham Crackers, Cool Whip

1. Dice the apple and place in a mug.
2. Top with coconut oil, cinnamon and brown sugar.
3. Cook for one minute and stir, repeat 2-3 times until apples are desired consistency. I like mine mushy but RJ prefers his apples still be a little crunchy!
4. Top with nuts, crushed graham crackers, cool whip or berries!

Dark Chocolate Bark
1/2 Cup of Dark Chocolate Chips
1 Tbsp Coconut Oil
Toppings: Shredded Coconut, Pomegranate Seeds, Nuts, Raspberries, Blueberries, Etc.

1. In the microwave, melt together chocolate chips & coconut oil. Every 30 seconds, stir mixture to keep from burning.
2. On a lined cookie sheet (aluminum foil, parchment paper, etc.) spread chocolate thin.
3. Top with whatever toppings you prefer.
4. Place in freezer until hard. Break it into pieces and store in an airtight container in the freezer.

If you’re not a baker, a few of my guilt free desserts are Larabars (mint chocolate chip OMG), Chocolate Coconut Luna Bar (I cut them all in half and store in a baggie, they are filling and I find half cures my sweet tooth!), Hail Merry Products or a GG cracker with PB and dark chocolate chips! What’s your favorite guilt free pleasure?! I’m happy this post is finished because each time I come to write it or edit it, I end up running to the fridge to grab one of these delicious goodies. Happy Friday! XO

Soaking up everyday is easy with this sweet boy. He’s pretty much all smiles as long as the attention is all on him. He really loves eating, babies and Doodle. He’s scooting and already trying to get into everything. Lucky for us, so far he pretty much just goes in circles. His first tooth popped through and he has a little bit of very blonde hair. ⁣

Speaking of being frozen.. supposed to go to Memphis Monday but an ice/snow storm is coming?! So we either have to leave tomorrow or wait 😭 which interferes with the GF fried bologna biscuits I was surprising RJ with Sunday morning. 😂 #HomeSweetSitton
