Easy Winter Arugula Salad + Homemade Hummus

It’s hard not to get involved in the #NewYearNewYou hype. Something about a fresh start does make you want to better yourself, especially after a holiday season full of rich indulgences and bubbly drinks + a Wine and Food tour of Italy. For me, a clean slate also involves a clean fridge and back to the basics. 

I love to fill my fridge with this chicken recipe. It’s so easy and versatile, perfect for lunches or a quick dinner. I like making it instead of buying lunch meat, usually it’s around the same price as lunch meat but much more filling and healthy. I always make a big batch to keep in the fridge for different recipes. This week I’m using it to top my favorite winter salad! 

You can easily mix n’ match this salad to make it perfect for you. I love, love, love arugula. It’s my favorite green! Not only does it hold up very well in the fridge, I think its downright delicious. But if Arugula isn’t your cup of tea, you could easily swap this out for whatever you’d like (think Spinach or Spring Mix!). Some other swaps you could make are adding whole chick peas instead of hummus or diced onion. While I like to add feta cheese, you could easily leave it off to make this Whole30 or Paleo. 

I recently discovered Aldi #GroceryStoresMakeMeOddlyHappy. I purchased so many organic products for under $70. I will be doing a full Aldi Haul soon, but a couple of products I had to share sooner because I’m o-b-s-e-s-s-e-d. 

This raspberry dressing is so simple and delicious. I love that you can read and understand every ingredient on the label. I also love these crispy quinoa, brown rice crisps. Perfect to dip in homemade hummus or crumbled on top of the salad. 

Homemade Hummus

Level: Easy

Time: 5 Minutes

Ingredients:

2 Cans of Chick Peas (Drained & Rinsed)
Roasted Red Peppers (About Half a Pepper)

Juice from 1 Lemon

Olive Oil (Around 1/4 of a cup, eyeball it to your desired texture)

Rosemary (1 Tablespoons)

Minced Garlic to Taste (I use about 2 Tablespoons)

Blend everything in a food processor or blender, enjoy!



Winter Arugula Salad

Level: Easy

Time: 5 Minutes 

Ingredients:

Grilled Chicken (Shredded)

Arugula

Walnuts 

Feta Cheese

Apple (Diced) or Pomegranate seeds

1/2 Avocado

Spoonful of Hummus 

Raspberry Vinaigrette  

Roasted Red Pepper Brown Rice Crisps

Add everything except the hummus in a tupperware or bowl, shake to mix. Top with a scoop of hummus and enjoy!

I really enjoy this salad because it is filling + all the ingredients are staples in our fridge. I ate this salad a couple of days ago and couldn’t stop thinking about it ever since. Since then, I’ve had it three days in a row! If you try it I would love to hear what you think or how you adjust it to make it your own.


We’ve been rearranging a few rooms in our house, it’s such a refreshing change for the new year and I love how it is turning out! We finally ordered our last two pieces last night but I had to share while they were on sale. I’ve been looking for a bigger nightstand with more storage and I’m obsessed with these. I’m even more excited because our old nightstands will make the perfect end tables for our new couches and I love repurposing things in our home! I’m working on a post on how to rearrange and reuse to create a whole new home, I can’t wait for you to see it. xo
