Easy Date Night Caprese Chicken

While my family says that I am not, I swear I have a little Italian somewhere deep in me. I can get pretty loud, laugh and love hard, but I mainly believe this because of my cuisine preference. I am all things pasta, cheese, fresh herbs and spices.

Tonight I wanted to share with you one of my favorite [easy] chicken recipes! Balsamic Caprese Chicken. It is super quick to make but feels fancy so it makes for the perfect date night dinner in for you and your beau!


Ingredients: 


  • 2 Chicken Breasts
  • Salt
  • Pepper
  • Fresh Basil
  • Milk Mozzarella
  • Heirloom Tomato 
  • 1/2 Cup Balsamic Vinegar 
  • 2 Tbl Sp of Olive Oil

Prep work:

Preheat oven to 375

Thinly slice your heirloom tomato and milk mozzarella [2 prices of cheese per chicken and one slice of tomato]. Then finely chop your fresh basil. Sit to the side.

Salt and pepper your chicken breast on each side [I kick it up a notch with paprika and garlic powder]. 

Cooking instructions:

Heat up 2 tablespoons of olive oil on high in a pan. Place chicken in pan and let cook for approx 5 mins, flip chicken and let cook for an additional 5 mins. 

Place entire pan with chicken in oven to let it finish cooking. 

While chicken is in oven, pour 1/2 cup of balsamic vinegar into a small pot and cook on high. P.S. a lot of vinegar will evaporate, that is okay! Let it continue to cook on high for about 5-7 mins then turn off your burner. As the vinegar cools it will thicken leaving you with the perfect drizzle to top off your masterpiece. 

Pull chicken out of oven. Layer with tomato, mozzarella and basil. Then plate! I put mine over some simple angel hair pasta tossed in a little olive oil and fresh garlic. Then drizzle with your balsamic reduction. Fancy right? And babe doesn’t even have to know how easy it was!
