Even though Summer is wrapping up, we are starting to grill more than ever! Fall in Tennesse is the perfect patio weather which means we are spending most of our evenings out back. These Grilled BBQ Chicken Bowls are easy, delicious and healthy – making them a MAJOR win in my book. Even if you don’t have a grill, you can make this recipe in your kitchen no problem!

Grilled BBQ Chicken is so delicious because the BBQ sauce creates a yummy, crisp, sticky coating while keeping the chicken moist and tender. Yes, please! BBQ sauce can be tricky though, most are loaded with hidden sugars making this a not so healthy dinner. Luckily, I’ve found the perfect low sugar BBQ sauce. This Primal Kitchen Unsweetened BBQ Sauce is delicious with only 2g of Sugar! We also love this Noble Made Classic BBQ Sauce. Whatever sauce you choose, just be sure to note the sugar content.
We keep things simple, just adding grilled zuchini but you could mix in whichever veggies you like best! We found the best microwavable rice at Costco recently. It’s this Organic Brown Basmati Rice but can easily sub for your favorite rice, grain or cauliflower rice substitute! If you’re watching your carbs, do less rice and more chicken + veggies. I do about 1/4 a cup of rice.
Enough chit chat, time for the good stuff!
Grilled BBQ Chicken Bowls
Ingredients
- 2 Chicken Breats
- 1/2 Cup BBQ Sauce + Extra 2 tbsp
- 1 Whole Zucchini
- Lemon Pepper Seasoning
- Rice of Your Choice
Instructions
- Marinate Chicken Breasts in 1/2 Cup of BBQ Sauce, be sure each side is coated. We let is sit for about 10 minutes.
- While marinating, slice zucchini length wise and season each side with lemon pepper.
- Grill the chicken and zucchini, until both are fully cooked.
- Cook Rice.
- Assemble everything in two bowls, drizzle with remaining 2 tbsp of BBQ Sauce
Notes: If you do not have a grill, you can roast the chicken in the oven (about 25 minutes at 425 F) or in the crockpot (would require extra BBQ sauce or a splash of broth). You can also easily roast the zucchini or saute in a pan with the lemon pepper seasoning and olive oil.
This BBQ Chicken Bowl recipe has become one of our week night staples. We usually grill extra BBQ chicken then reuse it for salads. Tonight, we are making low carb chicken quesadillas for the first time! If you try this or have any questions, please let me know! XO
