A few years ago, I went to visit one of my best friends in California and she introduced me to a little bowl of sunshine. I had never had one before, but she described it as basically a ‘smoothie bowl with the most delicious toppings”. Sold.
We went to this little place in her neighborhood and I was immediately in love with Acai Bowls. When I came back to Tennessee, I had the hardest trouble finding them! A few years later and a few places have popped up around town but I always get one whenever I’m visiting California now!
On my most recent trip, we went to The Butcher’s Daughter which I highly, highly recommend. Seriously, the food and drinks were to die for. My mouth is watering just thinking about it! Caylee and I split an Acai Bowl and a Breakfast Burrito, both incredible but the Acai Bowl was best we’ve ever had.
When I returned to ole Tennessee, I was determined to recreate it.
Y’all I did it!
I even found a little hack that makes these perfect to make ahead and thaw out when you’re ready for a delicious treat.
Makes 2 Bowls
I N G R E D I E N T S
1 Cup of Spinach (I use fresh spinach, frozen)
1 1/2 Cup of Mixed Berries (Frozen)
1 Cup of Almond Milk
1 1/2 Tsp. of Acai Powder (This is the one I ordered off Amazon and I LOVE it.)
A Few of my Favorite Toppings: Peanut Butter, Almond Butter, Shredded Coconut, Cocoa Nibs, Bananas, Berries, Honey, Granola (I found grain free granola at Whole Foods and it’s soo good, the brand is Steve’s Paleo Goods)
D I R E C T I O N S
1. In a blender or nutrabullet, combine all the ingredients (except toppings)
2. Place in bowl with desired toppings
Easy as 1- 2- 3! A few hacks or fun ideas:
-Make a huge batch for a DIY Acai Brunch Bar with your girlfriends! Have everyone bring a topping and see the different combos y’all create!
-My favorite hack: Make a batch (I usually double) and freeze what you don’t eat. The Acai Bowl at Butchers Daughter was a very frozen like texture and if you let the batch freeze some you can scoop it out like ice cream. SO YUMMY
-If yours is a little water, blend in some ice to thicken it up.
I don’t just enjoy these babies for breakfast, they are great for lunch and dinner too! I love adding peanut butter to mine, I use Justin’s All Natural (no added sugar, yay!) and it’s like a grown up, hippie PB & J.
