Coconut Lime Cauliflower Rice + Hawaiian Bowls from Heaven

Cauliflower rice is basically my main food group these days. I’m joking but kind of not! I eat it so, so often but it’s so good, so easy and low carb. #OhYesPlz

Honestly though, as much as I love cauliflower rice, it can get boring. I decided I was on a mission to jazz it up.

One of the first dishes I made for RJ (way back before I even really cooked!) was a BBQ Pineapple Chicken dish and I swear this is when he decided to marry me. I wanted to find a way to bring it back, yet lighten it up. I decided I would approach it with a lighter touch of the islands with citrusy fruits, coconut milk and a touch of BBQ sauce. It was heaven y’all.

So good, that we’ve been eating it at least three times a week, for the past three weeks.

I’ll share the bowl recipe below too but the main star is this cauliflower rice. I have been making huge batches and eating it with Hawaiian bowls, Mexican food and even just with grilled chicken. There are a million and one ways to eat it but I love that you don’t even need sauce, it’s that delicious.

I’m not a huge coconut fan. I don’t like coconut milk in my coffee, I hate coconut water but for some reason this just works. The coconut milk adds a creaminess that makes the cauliflower rice SO good. It’s not too soggy though, which is something I worried about. Add in the lime juice and cilantro and it’s just plain heaven.

1 Bag of Cauliflower Rice (I use frozen steam in the bag, but don’t actually cook it in the bag. Normal frozen would work too)
6 Tbsp Light, Unsweetened Coconut Milk (I found these cans on the Asian food aisle)
Juice of 3 Limes
1 Tbsp Dried Cilantro (fresh would work too)

D I R E C T I O N S 
1. In a large skillet, empty bag of frozen cauliflower. Cook for about 3 minutes.
2. Add in the other ingredients and stir.
3. Simmer/Sauté for about 4-6 more minutes until all the juices are absorbed and rice is starting to brown.

Do you see how easy!? It has been a game changer. When we make Hawaiian bowls we top the rice with the following:

-Grilled Chicken (you can also marinate in BBQ sauce and grill, I love Annie’s BBQ sauce because it has lower amounts of sugar)
-Grilled Pineapple
-Grilled Zucchini
-Tiger Hot Sauce (this is a random hot sauce RJ’s always used, it’s similar to an Asian hot sauce but isn’t like siracha)
You could also add: black beans, onions, red peppers, avocado — the list goes on!
