#ChaChaEats: Mexican Sweet Potatoes

TGIF! This week has been busy per usual & fun! It was so nice adjusting to being engaged mixed with our normal life. Everything is pretty much the same as before except we talk a lot about wedding planning now. Another thing that’s different is RJ is really open to trying new things. He’s not Catholic but I am, he recently started coming to church with me and on Wednesday he got his ashes for Ash Wednesday!! Last night it was Bring Your Boy to Barre at Neighborhood Barre. With a little convincing he actually decided to come! Needless to say it was hilarious and he said he has a whole new appreciation for our workouts! 

With busy weeks like this one, I’m always on the lookout for quick, healthy and delicious date night dinners. This chicken is my absolute favorite (especially since I could eat mexican food every night of the week) and my favorite way to eat it is over roasted sweet potatoes (in the pictures above we paired it with shrimp but it’s a lot better with chicken, I just couldn’t eat meat on Ash Wednesday). 

Roasted Sweet Potatoes 

Serves 2-3 

Ingredients: 

2 Sweet Potatoes 

2 Tablespoons of Cumin

1 Tablespoon of Paprika

2 Tablespoons of Olive Oil 

Directions: 

1. Preheat oven to 425, Peel and dice sweet potatoes.

2. On a baking sheet, combine all the ingredients. Toss to coat evenly.

3. Bake 20 minutes or until they are brown, a little crispy on the outside. 

Mexican Bowls

Serves 2-3 

Ingredients:

Roasted Sweet Potatoes

Skinny Fiesta Chicken 

1 Can of Black Beans 

1-2 Cups of Arugula

1 Avocado (Optional)

Directions:

1. Heat black beans according to can.

2. In a bowl layer sweet potatoes, chicken (with a little bit of the juices), black beans and arugula. Top with avocado.

This is one of my favorite dinners ever. RJ loves this one as well, so its boy approved ;). You can make the chicken in the crockpot and it’s so easy to throw together after a long day. Soaking up everyday is easy with this sweet boy. He’s pretty much all smiles as long as the attention is all on him. He really loves eating, babies and Doodle. He’s scooting and already trying to get into everything. Lucky for us, so far he pretty much just goes in circles. His first tooth popped through and he has a little bit of very blonde hair. ⁣
