Spots and Stripes

Monday, August 31, 2015

Pattern mixing is one of my favorite ways to add personality to a casual outfit. Cheetah and stripes go together like pb & j, plus it's easy to throw on a for a quick coffee run or day at work.

Your Dream Closet: Wardrobe Essentials

When I say dream closet I know your mind instantly jumps to the celebrity of the moment, her boutique closet on the cover of US Weekly and how many Birkins and Chanels grace her crisp white shelves. Yet, to the everyday woman, a dream closet means going in each day and having the perfect mix of pieces for an endless wardrobe.
But still we're all guilty of it… a closet full of clothes but nothing to wear. You know what I'm talking about, you shop and shop and shop, yet two weeks later you are stuck with the same ole' thought 'I have nothing to wear'… Meat & potatoes.

Meat & Potatoes means that we buy too much 'fluff' for our closet. We buy trendy pieces that we may wear once but do not hold a place in our closet. Whenever I do a closet makeover with someone, these are often the first pieces to go. True, it's great to buy cheap, trendy pieces if you're unsure about the fit/style or think the trend won't be around long, but you should focus on building the bulk of your closet first. That's what we are focusing on today, the meat and potatoes of your wardrobe.

10 Minute Pesto Zoodles

Wednesday, August 26, 2015

Remember when I told you I'm not good at recipe posts? I don't like to waste food so I shoot the recipes while I'm making them for an actual meal (aka this was my lunch & I was shooting while cooking) but I have so many yummy & easy recipes, I have to share them with you!
I'm Italian and could eat bread + cheese for every meal. It's my weakness. Obviously I can't eat carbs and cheese 24/7 so I have to find healthy ways to feed my inner italian. One of my favorite faux-talian recipes is this 10 Minute Pesto Zoodles. This easy carb free zucchini noodle is so similar to pasta that you'll never look back.

Life Lately: August

Tuesday, August 25, 2015

August is moving so fast, I have barely had time to catch my breath. I try to do Instagram round ups every two weeks but I'm behind! So sorry, I did give my blog a complete make over.. what do you think?! I hope you're loving the simple, chic, organized layout.

ps. how cool is this van I spotted at Publix? I loved the refreshing reminder on the back.. 'GO SLOW, SEE MORE'. I think it's my new life motto. :)

I Found Ya Miss New Bootie

Wednesday, August 19, 2015

If you remember from last year, I love Fall. I love anytime the seasons change, but Fall is great because it's cozy, it's my birthday season, and the Fall fashions are always my favorite. In the south Fall is great because it's warm during the day with a cool breeze and cool at night. It's the perfect time to layer on accessories without sweating like a maniac.
It's still hot here but I like to start incorporating Fall into my wardrobe towards the end of August (aka now, can you believe it's almost September?!). My favorite ways to get into Fall mode are wearing Autumn colors (beautiful rich tones, oranges, olive, neutrals), 'pinning' my favorite pumpkin and crockpot recipes, and adding booties to my favorite dresses and denim shorts

It's the perfect time to start stocking up on booties and I wanted to share a few favorites I already have or am eyeballing for this year!

Skinny Fiesta Chicken aka Mexican Crack Chicken

Wednesday, August 5, 2015

I have SO many DIYs and recipes to share with y'all but I am so bad at those posts. I always, always, always forget to take pictures before and during the process. I get so excited for whatever I'm cooking or making I jump straight in. It's on my list of things to work on!
I make a lot of chicken and Babe is quick to proclaim this is "his favorite way I cook chicken." I love this recipe so much though I decided to share it without pictures of the process. I'll never be one of those bloggers with cute recipes on Pinterest with gorgeous pictures and funny stories about their dinner. Most times when I'm cooking I am covered in food, throwing dishes around the kitchen. Real life.

Mexican Food. Is there anything better in life? Let me answer that for you.. no. Queso, Guacamole, enchiladas, the list goes on and on. Every good comes with a bad, right? The worst part is the calories. I try *key word, try* to eat Mexican once in a blue moon but who am I kidding we end up eating it multiple times a week. The way I handle this? Skinny Gal Fiesta Chicken.
This recipe is not only so easy, I promise it will be your favorite way to eat chicken. All you need is 6 ingredients and a crock pot or baking dish. I love to double (or triple) this recipe on Sunday night and eat the chicken for a few days that week. We will mix it with brown rice & black beans for a healthy take on a burrito bowl, add it to a quesadilla (not that healthy but yummy for sure), or I whip up a salad and throw some on top. The possibilities are endless, I would love to see what recipes you add it to! I'm always looking for new ideas.

Paleo, Whole30, Crockpot and Delicious -- what more can you ask for?!

Skinny Gal Fiesta Chicken
(Serves 2, *132 Calories per Serving)

2 Chicken Breasts, uncooked and thawed
3 Limes, juiced
Cilantro (You can use fresh or 3 Tablespoons of dried)
1 can of Diced Tomatoes + Green Chiles (The thing you add to Rotel dip)

1. Preheat the oven to 450
2. Place chicken breast in the baking dish
3. Top with the remaining ingredients
4. Bake for 30-35 minutes or until it is cooked all the way through (no pink, I usually take mine out around 20 minutes and cut it into small pieces so it cooks faster)
5. Shred chicken with fork and knife, place in a bowl or tupperware and pour juice and contents from the baking dish with the chicken. Keep in the refrigerator for up to 5 days.
*If you are using a crock pot combine everything in the crock pot, cook on high for 3 hours or low for 5. Shred the chicken and return to juice
I promise this recipe is so simple, juicy and good. The chicken is so tender from baking in the juices. It's heaven. Let me know what you think if you try it out!
