Fri-YAY! We meet again. I'm so excited it's finally February. I love February. I love Valentine's Day. I love the short month, and I love that Spring is right around the corner. What are you guys most excited for this month?

Yesterday was the first day using my Mint budget app (get the deets here) and I'm reaaallly hoping I can stick to it all month long to create better spending habits. Today I'm going to share some healthy & easy Super Bowl Recipes, a few almost Spring cuties that have been poppin' up in my closet and the most popular January items you guys loved!

This year, I'm all about healthy + happy, simplified. I want to create healthy, delicious recipes for you guys that don't call for you to run out and buy a million strange ingredients from Whole Foods. #AintNoBodyGotTimeForThat

Today's edition of healthy, simplified is perfect for the Super Bowl (or even a fun dinner!). 

First up, sheet pan 'nachos' meets a delicious tortilla chip alternative. The best part is these can be tweaked to fit any diet/food restrictions you may currently have.

Plantain Sheet Tray 'Nachos' 
I N G R E D I E N T S
2 Boxes/Bags of Plantain Chips (These are usually in produce aisle or by the dried fruits/nuts)
Salsa Chicken (three ingredients, crock pot friendly, healthy & easy!)
Black Beans (Drained & Rinsed) 
Shoepeg Corn (Drained & Rinsed)
Rotel Tomatoes (Drained)
Shredded Cheese 
A pinch of cilantro, paprika & chili powder
1 Lime
Other optional toppings: pinto beans, onions, avocado, jalapeƱos, lettuce, whatever you like on your nachos! 

-These are so simple! On a baking sheet place plantain chips and whatever toppings you prefer. Sprinkle with cheese & seasoning. Broil until cheese has melted. Enjoy! 


Lately I've been craving all things buffalo, but I have been hesitant to eat any because buffalo can equal lots of butter, ranch and fried foods. Solution...
Baked Buffalo Turkey Balls
I N G R E D I E N T S
For Meatballs: 
1 Ground Turkey
1/4 Cup of Whole Wheat Bread Crumbs (plain bread crumbs will work too)
1 Egg
1 tbsp Minced Garlic
1/2 tbsp Onion Powder
Pinch of Salt & Pepper 
For Sauce: 
1 Bottle of Frank's Red Hot (Make sure it's just hot sauce, not wing sauce)
1/3 Cup Coconut Oil 
Dipping Sauce of Preference (Both RJ & I love Tessemae's Dairy Free Ranch but Walmart has other great greek yogurt ranch options!)

D I R E C T I O N S
1. Preheat oven to 425 F 
2. In a large bowl combine all meatball ingredients
3. Roll into small balls or use a cookie dough scoop to place meatballs on a lined cookie sheet
4. Bake for 6-7 minutes, flip all balls over and bake another 6-7 minutes until fully cooked
5. While meatballs are baking, combine bottle of hot sauce with coconut oil and cook for 30 second intervals in microwave until coconut oil is melted. Whisk with a fork or whisk until combined. 
6. Toss meatballs in sauce & place back on baking sheet. Cook in over for 3-4 more minutes. 
7. Serve with dipping sauce! 

*These would also be great served with a sliced cucumber underneath each one! These were SO yummy, we ate them for dinner on a flatbread. 


On a mission to satisfy my craving for Zaxby's Boneless Wings (no shame!), I have been trying to perfect my roasted buffalo cauliflower! I wanted to jazz it up for the Super Bowl and the most delicious tacos were born! 

Baked Buffalo Cauliflower Tacos
I N G R E D I E N T S
For Cauliflower:
1 Bag of Cauliflower Florets
1/2 Tbsp Olive Oil
1 Bottle of Frank's Red Hot (Not buffalo sauce, just the hot sauce)
1/3 Cup of Coconut Oil
For Slaw: 
Bag of Broccoli Slaw
1 Single Serve (1/2 Cup) of Greek Yogurt or Plain Almond Milk Yogurt
2 Tbsp Dijon Mustard
1/2 Tbsp Apple Cider Vinegar
1/2 Tbsp Agave Nectar or Honey
Juice of 1/2 Lemon
For Tacos: 
Corn Tortillas (Cut in Half)
Ranch or Sauce of Preference (Both RJ & I love Tessemae's Dairy Free Ranch but Walmart/Grocery Store has other great greek yogurt ranch options!)
Optional Toppings: Cucumbers, Avocado, Onions, Cilantro, Tomatoes 

D I R E C T I O N S 
For Cauliflower: 
1. Preheat oven to 425 F
2. In a bowl, toss cauliflower in olive oil & place on lined baking sheet
3. Bake for about 10 minutes, flipping halfway through
4. While baking, combine bottle of hot sauce with coconut oil and cook for 30 second intervals in microwave until coconut oil is melted. Whisk with a fork or whisk until combined
5. Toss Cauliflower in hot sauce, return to bake sheet & bake for an additional 3-4 minutes
To Build Tacos:
7. Combine all slaw ingredients in a bowl
8. Heat Tortillas according to package
9. Place slaw on tortilla, followed by cauliflower, toppings then drizzle with sauce
10. Enjoy! 




 We've been getting a few days of nice weather here and there. I must say it's giving me quite the spring fever! I am trying my hardest not to shop for spring yet, but I seriously just can't resist. I've picked up a few pieces that work now and later, they're just so good I had to share. 
A head's up: my all time favorite shorts sell out every year. This is the perfect time to snag a pair before all the sizes are gone. They are pricier but I've had mine 3+ years and they still look brand new! I wear them SO much, seriously one of my favorite pieces I've ever bought.
